As we think that organic way of wine making is not only vineyard and cellar work but a global way to do it, we also organize wine workshop to make this understanding more easy for our visitors. Taste organic wines in combination with local food you have cooked yourself with alsatian farmer products, pick some wild plants in our vineyards and learn to prepare them, have a walking tour to discover much more about wine than landscapes...and a lot more. Each workshop includes cellar visit and wine tasting. Our partners are:
Clarisse Zenner, who created Les Oiseaux Rares several years ago. Today, she enjoys sharing her know-how acquired in the transformation of plants and fruits into subtle spicy mélanges. She’s a very perceptive chef and has mastered the art of composing a meal full of flavors and discoveries combining the flavors of yesteryear from her grandmother’s recipes with spicy nuances from faraway countries.
Gérard Verret, Le Jardin Gourmand. This “farmer, plant gatherer, transformer,” has also started a network of people who strive to perpetuate the recipes and know-how of our rural areas. Inspired notably by Pierre Rabhi, Maurice Chaudière, François Couplan, and Jean Marie Pelt, Gérard creates healthy recipes which are always surprising and atypical based on a natural cuisine of edible plants.
Christine Spohn, Les Gourmandises Bio, culinary arts trainer, uses cooking as a training aid during meetings, something for sharing and creativity. After professional chef training, she took additional training in Gestalt Therapy specializing in digestive problems as well as training on the “meaning of dietary motivation” to better understand the symbolic value that comes with each food. Trained on wild edible plants by the ethno-botanist Francois Couplan, she wants to above all share her enthusiasm for healthy, balanced, creative, and flavorful food.
Mathieu Dischinger, from Terre de Sylphe, is a licensed mountain guide in the Munster Valley. His knowledge of the Vosges mountains and also of the vineyards qualifies him to offer walking itineraries which will wake up your senses and lead you to discover and share the simple pleasures of a hike in the countryside, of a return to the roots of the Alsatian people.
Jacques Renaud, established in Colmar for many years, practices wellness developed through naturopathy and relaxing massage. He continues to research ways to achieve permanent wellness and offers various relaxation treatments (Korean, Thai). He practices reiki, plantar reflexology, and massage using essential oils.
Hélène Burtscher Fleck, of K’art’on, is an artisan cardboard pattern-maker. In her hands an ordinary packing box takes on a new life, adapting, forming, bending to your delight. Trained under Eric Guillomar from Compagnie Bleuzen in Paris, Hélène will introduce you to this joyeus playful art form which will allow you to express creativity you never believed you possess.
